Keeping with French tradition we harvest only the Petit Gris, the same snail found on menus in France and around the world. Our snails are finished on non-gmo, organic cornmeal, fresh greens and herbs--many from our garden. After poaching in a shallot and herb broth they are de-shelled and frozen, thus ensuring their unique texture and flavor. Never serve canned snails again.
